Move the regenerable Zot index from Mayastor to node-local ZFS through a new StatefulSet identity. Argo CD proves an S3-backed catalog request before it switches the stable Service, and it prunes the old StatefulSet last. This supersedes #2114 because StatefulSet claim templates are immutable. Checks: 142/142 cluster-free guards passed with no skips.
