Document the forgejo-operator native pipeline, its configured completion evidence, and where to inspect task timing and profiles. Use an exact Build ID in the release command.

Validation: reviewed the commands and target against the active project catalog; git diff --check passed. This documentation change goes through the normal native Build and release checks.
