feat(defconfig): request CONFIG_EFI_VARS_PSTORE=y explicitly ... 5d1c233cc7

The efi_pstore backend was only default-derived: present in .config
because Kconfig defaults it on under EFI, requested by nothing. The
node side (builder-images 963c18a9) drops the ramoops kargs so
efi_pstore registers as the backend — the EFI varstore survives
hcloud resets where guest RAM does not. A required backend must be a
requested symbol, so the builder hard gate can fail loud if a future
toolchain drops it. No binary change: the symbol was already =y.
