Switch the stable Zot S3 credential Secret to the proven zot-v2 identity. Keep the old identity declared for rollback.

Phase 1 Job minio-zot-v2-identity completed and proved own-bucket access plus cross-bucket denial. The full seanfarm guard suite passes.
